I am not one for following a recipe but trying new things out is always a vibe. I wanted biscuits and ended up making biscuits with a cake texture. They tasted so good so I didn't mind too much. There also would have been 8 cookies if I didn't end up eating so much of the batter :) I used carob powder but feel free to use cacao or cocoa powder instead. I prefer carob powder as it is free of caffeine which cacao and cocoa both contain so for those anxious souls or those suffering from extreme stress at the moment I would opt for the carob powder.
Ingredients:
1 cup oat flour (I used quick oats ground up in a blender)
1/4 cup buckwheat flour
2 tsp baking powder
1/2 tsp guar gum
1/8 cup carob/cacao powder
Pinch salt
1 egg
1 heaped tsp honey (add more for sweetness)
1 Tbs melted coconut oil
3/4 banana/ 1 small banana
1/4 cup almond milk
Method:
Heat oven to 180C
Mix all dry ingredients together in a bowl
Mix all wet ingredients together
Make a well in the middle of the dry ingredients and pour the wet ingredients in
Mix together well with a handheld beater or by hand
Grease a baking tray and add a dollop of batter. Smooth out with the back of a spoon to make a circle. You can also use a muffin tray to get a perfect circle.
Sprinkle on buckwheat and a crack of salt
Bake for 10-15 mins. The edges should start to go brown
Remove & let cool. Enjoy with a nice cup of tea
