Healthy Blueberry Pancakes

   Sugar free

Breakfast sorted!!! I am a big fan of eating intuitively and some days that means green juices and veggies and other days it means Blueberry Pancakes. Although there really is nothing wrong with pancakes in my opinion as long as they aren't packed with sugar or made with refined flour. Both these items can cause inflammation in the body but luckily there are plenty of ways to make healthy pancakes and this Blueberry Pancake recipe is definitely one of them :)





1 cup oat flour (I ground GF rolled oats into a flour)

2 Tbs honey

1 tsp baking powder

1/2 tsp Himalayan salt

Sprinkle cinnamon or more to taste

1 egg (can repace with a chia or flax "egg")

2 Tbs melted coconut oil/butter

1/3 cup almond milk

1/2 cup fresh/defrosted blueberries



Mix all dry ingredients into a bowl

Add all wet ingredients (except blueberries) to a bowl and mix with a whisk or handheld blender until light and fluffy.

Make a little hole in the middle of the dry ingredients and pour the wet mixture in

Stir together and mix well. 

Add blueberries and stir in.

On low heat, melt a little coconut oil/ butter.

Once melted, add 2 Tbs of batter onto pan.

Wait 3-5 mins or until you see little bubbles then flip over and cook for another 3-5 minutes on the other side.

Remove and add yummy toppings of choice such as banana, raspberries and nut butter :)
