Nut Butter Millionaire Bars

Here is a simply delicious treat for you. Similar to that of a millionaire bar except with only two layers this delicious treat is satisfying and packed with healthy fats making it a perfect treat for you and your family. I chose to use Lindt 78% for the chocolate but anything from 70% up is good. I would also recommend using a thicker nut butter such as almond or peanut butter just to make the base more solid, I used macadamia and it does work but the base became a bit soft once being left out for a bit. Ingredients:

Base:

1 cup nut butter of choice (I used macadamia nut butter but almond or peanut butter work best)

1/4 cup honey

1/2 cup coconut flour

Topping:

175g dark chocolate (70% +)

1/2 cup nut butter

 

Method:

Base:

Line a cake tin or container with wax paper

Mix coconut flour, honey & nut butter together well in bowl

Spoon into container and flatten out

Choc topping:

Place chocolate & nut butter in bowl and place over a pot of boiling water

Stir well until mixture is smooth

Pour the mixture over the base and smooth out to make an even layer

Put in fridge for an hour

Remove and cut into squares and store in fridge.
