Peanut butter & Chocolate Chickpea Cookies

*Makes 6 - 8 cookies

Ingredients:

3/4 cups cooked chickpeas tinned and rinsed

1/8 cup peanut butter (you can sub for any other nut butter of choice)

1/8 cup water or non dairy milk

1 tsp vanilla extract or ¼ tsp vanilla powder

3 tsp date syrup/maple syrup/coconut nectar

1 scoop protein powder of choice

1 1/2 tsp baking powder

Roughly chopped choc bar or dark choc chips

 

Method:

Place chickpeas into a colander and rinse well. Pat dry and place into blender with all ingredients except for the roughly chopped chocolate or choc chips.

Blend until smooth. You may need to scrape the sides of the blender and keep blending until smooth. Mixture will be thick and similar to that of cookie dough

Scoop into bowl and mix in the chopped chocolate.

Spoon cookies onto a baking tray and flatten down with a spoon.

Bake for 10 - 15 mins on 200C

Remove and let cool.
