Looking to up your veggie intake?! Why not start the day with this Green Breakfast Bowl packed with plenty of veg, protein & healthy fats. This is a perfect breakfast for keeping your blood sugar levels balanced throughout the day which means less snacking! :)
2 free-range eggs
1 medium/large zuchinni
Bunch/handful of broccolini
Handful baby spinach
1 Tbs Green pesto/basil pesto (I used Pesto Princess Basil Lemon Pesto)
1 tsp Organic virgin coconut oil
1 Tbs Almond flakes
In a large pot/pan boil, fry or poach your free-range eggs
Cut the ends off the zuchinni & peel layers from the top down with a peeler until you can't peel anymore. Cut the remaining piece and add to the sautee mix in the next step.
In a pan, sautee broccolini & zuchinni lightly in 1 tsp coconut oil
Slice a 1/4 avo & place in bowl or plate with baby spinach
Add the sauteed broccoli & zuchinni,
Place the eggs on top.
Top eggs with a spoonful of pesto & a sprinkling of almond flakes
